Compassionate Pazookie

If you’ve never had a Pazookie, it’s basically a big warm chocolate chip cookie with ice cream on top! Before I was plant based, I would get these gluten free and I was craving one! So this was our first time trying it out and it worked perfectly. It was a hit with the whole family. It’s gluten free and vegan made with minimally processed ingredients with brands I trust: Simple Mills, Nada Moo, and Miyokos. I personally dislike when a recipe goes on forever in the beginning and you have to scroll down to find it so let’s just get to it shall we?

Oh and some moral support from your furry little helpers like my girl in the photo below is advised. However, this recipe does contain chocolate, so do not feed any to your baby. Chocolate is toxic to dogs. Stick to their own treats and kisses as you bake. If they accidentally get ahold of your creation, call the emergency vet and have them give you the number to the people who can tell you if the amount of chocolate they ate is enough to go to the vet. They can research the exact product, calculate if it’s enough to warrant a vet visit and give you guidance on what to do. If you keep everything high up and away, you’re good!

Recipe

What you’ll need:

Two boxes of Simple Mills Cookie Mix


4 tsp Alcohol free vanilla


6 TBSP Miyokos European-style vegan butter


6 TBSP Almond Milk

Nada Moo Ice Cream. Preferably their organic vanilla which is the cleanest and pairs the best with the pazookie. If you can’t find, you can get cookie dough or chocolate. You can find this at your local health food store. They have a location finder on their website.


Directions:

Step 1:

Preheat the oven to 350. Soften the butter for a few minutes in a glass bowl in the oven as it is preheating. You don’t want to melt the butter as it makes the dough a little too wet and runny.

Step 2:

Put the butter, vanilla and almond milk into a glass bowl and whisk together well.

Step 3:

Add the mix and stir well until it forms a dough.

Step 4.

Plop the dough on a pizza stone and press down to form into a circle allowing the thickness to be about half an inch.

Step 5:

Put in the oven for 9-14 minutes. It really depends on your oven, elevation and preference. We like it to be soft so we undercook it a bit because when you take it out, it still cooks a bit on the stone.

Step 6:

Wait about 3 minutes to let it cool slightly, cut into pieces using a pizza cutter, serve it warm with your nada moo ice cream and enjoy!
