Compassionate Feta Bake-Gluten Free/Vegan
This is my version of the many recipes I found that didn’t quite do it for me as someone who wanted a gluten free and vegan version. I took inspiration from all the many non vegan recipes and perfected it. I must say, it’s a hit with everyone who loves a Mediterranean style meal! Let’s get right to it, shall we?
What you’ll need:
Violife Feta Block
Pitted kalamata, pimento and black olives. Aprox 2 cups of all olives, drained and mixed together
3/4 cup Non GMO Sun Dried Tomatos
2-3 cloves of fresh Garlic sliced up nice and thin
1/4 cup Organic extra virgin olive oil
1 and a half tsp of Italian Herb Seasoning or 1/2 tsp each of dried thyme, rosemary. and oregano
Schar Gluten Free Baguette
How to make:
Preheat oven at 350
Mix the olive oil, herbs, and garlic together in a glass measuring cup
Place the olives and sun dried tomatoes all around the edges of a baking pan
Drizzle the mixture over the olives and sun dried tomatoes trying not to get too much in the middle of the pan
Place the feta in the middle (the reason I don’t pour the mixture over the feta is because it’s already made with oil and putting more oil on top makes it a little too oily)
Put some more dried herbs on top of the feta
Bake for 18-20 minutes depending on your oven and then 1-2 minutes on broil
While the Feta bake is in the oven, cut up your baguette into slices.
Once it’s done, take it out to cool a little bit while you toast the gluten free baguette
Dip your bread in and enjoy!
Side note: We also like to make some Jovial Gluten Free Pasta and use this as our sauce sometimes! It’s delicious!
