Compassionate Feta Bake-Gluten Free/Vegan

This is my version of the many recipes I found that didn’t quite do it for me as someone who wanted a gluten free and vegan version. I took inspiration from all the many non vegan recipes and perfected it. I must say, it’s a hit with everyone who loves a Mediterranean style meal! Let’s get right to it, shall we?

What you’ll need:

  • Violife Feta Block

  • Pitted kalamata, pimento and black olives. Aprox 2 cups of all olives, drained and mixed together

  • 3/4 cup Non GMO Sun Dried Tomatos

  • 2-3 cloves of fresh Garlic sliced up nice and thin

  • 1/4 cup Organic extra virgin olive oil

  • 1 and a half tsp of Italian Herb Seasoning or 1/2 tsp each of dried thyme, rosemary. and oregano

  • Schar Gluten Free Baguette

How to make:

  • Preheat oven at 350

  • Mix the olive oil, herbs, and garlic together in a glass measuring cup

  • Place the olives and sun dried tomatoes all around the edges of a baking pan

  • Drizzle the mixture over the olives and sun dried tomatoes trying not to get too much in the middle of the pan

  • Place the feta in the middle (the reason I don’t pour the mixture over the feta is because it’s already made with oil and putting more oil on top makes it a little too oily)

  • Put some more dried herbs on top of the feta

  • Bake for 18-20 minutes depending on your oven and then 1-2 minutes on broil

  • While the Feta bake is in the oven, cut up your baguette into slices.

  • Once it’s done, take it out to cool a little bit while you toast the gluten free baguette

  • Dip your bread in and enjoy!

Side note: We also like to make some Jovial Gluten Free Pasta and use this as our sauce sometimes! It’s delicious!
