Homemade Spring Treats

I made my girls some homemade treats using a recipe I found on the PETA website and used flower cookie cutters. You can find the recipe here or down below. If you make these, please tag me @misschelseadiane so I can see how they turned out! I would love that.

You can watch how I made these at the video HERE.

PETA’s Vegan Carrot, Date and Oatmeal Treats

Ingredients:

1 1/2 cups gluten-free all-purpose flour
1/2 cup instant unsweetened oatmeal
2 tsp. baking powder
1 cup finely chopped or grated raw carrots
2 Tbsp. pitted and finely chopped dates
1/2 cup natural unsalted peanut butter
1/2 cup filtered water

Instructions:

  • Preheat the oven to 325°F.

  • In a mixing bowl, combine the flour, oatmeal and baking powder. Make a well in the center.

  • Place the carrots and dates in a separate bowl with the peanut butter and water.

  • Add the peanut butter mix to the well in the flour mix and stir until combined.

  • Flatten the dough on a lightly floured surface until it is approximately 1/4-inch thick. Use a cookie cutter to cut the treats.

  • Arrange on a cookie sheet lined with parchment paper and bake for 14 to16 minutes, or until dry.

  • Let cool for 30 minutes before serving.

  • Store in the refrigerator for up to 2 weeks.

Makes 40 servings

Tips I learned from making:

  • You may need to add an extra splash or two of water to make it stick together and make the dough.

  • After stirring the mixture together, I kneaded it all together with my hands to make it into the dough you see in the video.

  • Place some of the gf flour on your hands when flattening. You can use a flour dusted rolling pin, but I just used my hands.

  • I made the small cookie first and they cooked faster than the recipe so just keep an eye on them and take out once they feel dry. Same goes for the bigger cookies. I cooked them for less time than is stated on the recipe.

  • Dip the cookie cutters into some flour before each cut to prevent dough getting stuck in the crevices. It gives a cleaner cut and easier to push the dough out.

  • If you can’t find clean instant gluten free oatmeal, I just used organic rolled oats and ground them up slightly in my blender. You can also use a Mortar and Pestle to grind the rolled oats slightly.

  • If you don’t feel like hand grating the carrots, I put mine through a shredder first then chopped up the shreds with a chopper. It saved me a lot of energy and time.
